Shrimp Tacos with homemade guacamole

Happy Wednesday! :) I am pushing through the week. Today was beautiful with the sun out, my sister and I took my son to the park. We raced on the basketball court over and over again. It's his new favorite thing to do now and we love to watch him run. He clenches his fists and has his elbows up. It's the cutest thing ever. Now I need a nap but I'd rather blog instead. 




Sometimes making a homemade dinner is challenging. Especially when you don't have a whole lot of time or you are just exhausted from your day or week, you want something quick, easy, and good for you! One thing we can always agree on are shrimp tacos. Plus my two year old Lennon loves shrimp and guacamole so why not marry them together in a meal! YES HOMEMADE GUAC!!!! It is seriously the best thing ever I could eat this everyday for the rest of my life, if it was the only thing I had to eat! Lennon eats my guac by the spoonful! I caught him literally grabbing a spoonful and putting the whole thing in his mouth. I stopped him before he was about to take another spoonful from the bowl so then I gave him his own little bowl to eat spoonfuls. He's too funny. I use this same recipe for parties, gatherings, dinner, appetizers, and just to snack on while catching up with my shows which by the way.... I have been hooked on The Fosters! I just finished season 1 in the last week and seriously have cried so many times watching it. I got so choked up watching Jude meeting his dad for the first time after he got out of jail.. so sad! Okay anyways sorry for the sob story but if you watch the show you understand haha! For me, the key to guacamole is keeping it simple! You don't need those seasoned pre-packaged stuff. I bet you already have what you need in your cupboard! The simple, the tastier, the better, NO JOKE! 


Look at this bowl of amazingness! 
 



Ingredients for Shrimp Tacos 
1lb of Shrimp 
1/2 tsp olive oil 
1/2 tsp Salt 
1/2 tsp Pepper 
1/2 tsp Ground Cumin 
1/2 tsp Chili powder 
1 tsp Lemon Juice 
6-8 Corn Tortilllas 
1/2 cup Chopped cabbage 

Ingredients for Guacamole
3 ripe avocados 
1/4 cup chopped red onions
half of 1 jalapeno, chopped and seeded  
1/4 cup chopped cilantro 
1 whole lemon juiced 
1/2 tsp salt (add more to your liking) 


Lets start with the guacamole. Chop the red onion, jalapeno, and cilantro. I cut my avocados into halves, then in the halves I cut squares to scoop it out with a spoon so that it stays kinda chunky. You can completely mashed the avocado with a fork but I love chunks of avocado, therefore I do the fold over method of stirring! Seriously try the chunks of avocado, it makes all the difference! Add in the lemon juice and then salt to taste. To be quite honest, I love to put a lot of lemon juice and salt ;) 

Once shrimp is peeled and defined. Get your grill hot on medium heat. Add olive oil, salt, pepper, ground cumin, and chili powder. Grill your shrimp on each side for a few minutes or until you see it turning pink. 

Get your tortillas warm on the stove, then layer your taco. First the shrimp, spoonful of guacamole, and top with cabbage! Feel free to add cheese, hot sauce, sour cream whatever your heart desires. Enjoy it with a side of Mexican rice and black beans (not pictured, sorry!) I'll be better at that next post.
