Grilled Fish Tacos with Mango Salsa

As you can tell we love seafood and anything in a tortilla. The recipe is so fun to put together.  My obsession for them wasn't until a few years ago. My boyfriend Mario ordered them when we were in Monterrey. I pretty much ate off his plate. It was so delicious that I re-created it a billion times since then. I've made them for dinners with my family, Mario's family, for a party with friends. It has been a hit every single time. You have to try the mango salsa because it is everything!!!  Mango Salsa!!!!!!!!!!! All the sauce ingredients in the food processor.... TA DA!!!!!!!!!!!! Season these babies with love :)  THE BEST tortillas ever!!! I will buy no other kind because these are it! So light and airy! Setting up my taco station, & plates are ready, set, GO! (excuse the mess on on my counter haha!) With a side of refried black beans and cilantro brown rice. All made with love :)  Ingredients  1lb fresh tilapia  1 tsp salt 

Secret to Happiness

Exciting news that I am on my last year of college. I'm finishing an assignment for class and all of this is in my head. It has been one long journey. Sure I can dwell on some things like how long it's taken me. But that kind of thinking just makes me unhappy. This last class definitely stood out to me and there was one idea the Professor gave to us that made so much sense to me in my life. I wish I could tell him how much this helped my perspective but I want to share with you first.  "Happiness is not a function of what you have. It results from comparing what you have to some imagined alternative."  Honestly I have been kicking myself in the butt for those "imagined alternatives." It made me really unhappy for quite a while. Getting Clearly Creative

Happy Monday! Am I the only one happy it's Monday?! I worked this weekend therefore this feels like my "Saturday morning." Today will be filled with laundry and staying my pajamas :) Over the weekend, my sister Melissa came home from college. She had this grand idea with our Clearly Creative Escential jar holders from Partylite. We love finding new ways to decorate our holders. Hiking with toddlers

There's been so much sunshine lately that I wanted to take my son out else where than the park. I personally love hiking. It is hard to hike any strenuous trails with toddlers but there's a lake near by that had wide open trails for them . My best friend and I took our two little boys on a fun hiking adventure that was fun and safe for them.  First the boys were so excited they started booking it down the trail which scared us because I didn't want them to fall off the side. My son is pretty fearless. He just kept running.We tried to have him hold Mason's hand but that only lasted so long then they both started running! I brought my stroller so we switched off the kids in the stroller if one of them got tired. We hiked until we decided to stop by the water where the boys were throwing rocks into the water. Lennon wanted to grab the biggest rocks to throw into the water and Mason wanted to throw as many as he could all at once. It's these moments between these two ju

Day off

When you have a day off, do you ever feel like there's not enough time in the day?!   I have this anxiety where I feel like we're not going to have a good day if we don't leave early in the morning, if there's not a plan, if we don't get everything prepared to leave on time, if it's too late in the day then we won't get to enjoy the day as much. With our schedules, there's only so many days where we have days off together. Sometimes I need to just let that go and let it be, I stress myself out thinking that way. I worry too much about having the day be perfect with my family that I am not actually enjoying the moment.   This weekend was filled with spontaneous moments with my loves and it was exactly what I needed to let that anxiety go. Friday, my sisters, Lennon and I spent that evening in Santa Cruz visiting a friend that lived down the street from the beach, and my son loves the beach. Mediterranean Pasta Salad

This past week, it was my group's turn to bring something for our class potluck, I volunteered to do a pasta salad that needed to be vegetarian! You can't go wrong with a pasta salad and to marry it with olives, cherry tomatoes, artichoke hearts, and feta cheese!!!  So funny I'm making this pasta salad then as soon as I got done, I checked my email that my professor had to cancel class. I had two aluminum trays full of pasta salad. I gave most of it away to my family and friends, which I did not mind sharing the love. I knew we couldn't eat all of that ourselves. This recipe is so tasty, simple, and fast because the only cooking you'll be doing is boiling this pasta!
