Hiking with toddlers

Image
There's been so much sunshine lately that I wanted to take my son out else where than the park. I personally love hiking. It is hard to hike any strenuous trails with toddlers but there's a lake near by that had wide open trails for them . My best friend and I took our two little boys on a fun hiking adventure that was fun and safe for them.  First the boys were so excited they started booking it down the trail which scared us because I didn't want them to fall off the side. My son is pretty fearless. He just kept running. We tried to have him hold Mason's hand but that only lasted so long then they both started running! I brought my stroller so we switched off the kids in the stroller if one of them got tired. We hiked until we decided to stop by the water where the boys were throwing rocks into the water. Lennon wanted to grab the biggest rocks to throw into the water and Mason wanted to throw as many as he could all at once. It's these moments between these two ju...

Day off

When you have a day off, do you ever feel like there's not enough time in the day?!   I have this anxiety where I feel like we're not going to have a good day if we don't leave early in the morning, if there's not a plan, if we don't get everything prepared to leave on time, if it's too late in the day then we won't get to enjoy the day as much. With our schedules, there's only so many days where we have days off together. Sometimes I need to just let that go and let it be, I stress myself out thinking that way. I worry too much about having the day be perfect with my family that I am not actually enjoying the moment.   This weekend was filled with spontaneous moments with my loves and it was exactly what I needed to let that anxiety go. Friday, my sisters, Lennon and I spent that evening in Santa Cruz visiting a friend that lived down the street from the beach, and my son loves the beach. He said "beach, beach, beach" the whole way there. I ...

Mediterranean Pasta Salad

Image
This past week, it was my group's turn to bring something for our class potluck, I volunteered to do a pasta salad that needed to be vegetarian! You can't go wrong with a pasta salad and to marry it with olives, cherry tomatoes, artichoke hearts, and feta cheese!!!  So funny I'm making this pasta salad then as soon as I got done, I checked my email that my professor had to cancel class. I had two aluminum trays full of pasta salad. I gave most of it away to my family and friends, which I did not mind sharing the love. I knew we couldn't eat all of that ourselves. This recipe is so tasty, simple, and fast because the only cooking you'll be doing is boiling this pasta! I decided not to do measurements for this one because I made this for my class of 15-20. you can adjust the measurements easily for however many you are trying to feed :)  Mediterranean Pasta Salad  Organic Penne pasta  Medium whole olives Jarred marinated artichoke hearts  Fe...

Shrimp Tacos with homemade guacamole

Image
Happy Wednesday! :) I am pushing through the week. Today was beautiful with the sun out, my sister and I took my son to the park. We raced on the basketball court over and over again. It's his new favorite thing to do now and we love to watch him run. He clenches his fists and has his elbows up. It's the cutest thing ever. Now I need a nap but I'd rather blog instead.  Sometimes making a homemade dinner is challenging. Especially when you don't have a whole lot of time or you are just exhausted from your day or week, you want something quick, easy, and good for you! One thing we can always agree on are shrimp tacos. Plus my two year old Lennon loves shrimp and guacamole so why not marry them together in a meal! YES HOMEMADE GUAC!!!! It is seriously the best thing ever I could eat this everyday for the rest of my life, if it was the only thing I had to eat! Lennon eats my guac by the spoonful! I caught him literally grabbing a spoonful and putting the whole th...

First Blog Post!

Hi everyone :) I am so excited to share with you more about my daily inspirations and recipes. January was such a time for me to regroup and get my life together as everyone was starting their new years' resolutions, I was still figuring out mine. I was so overwhelmed thinking about graduating, starting a job again and potty training, and everything else I needed to balance. Now I can finally breathe because I WILL be graduating from USF in December! It's been such a journey and it is scary to know that I am almost to that finish line. Now February is my month to start fresh with a new semester, working again, getting organized, and get moving! This blog has always been on my mind for a while now. I read blogs from others that have inspired my days whether it were recipes, fashion, or mommy stories. That is what I hope you get when you come to my blog, just a little inspiration. Lovebirds, Valentine's Day is just around the corner. My boyfriend and I usually like to spen...
